Delinda s Minestrone

Well, Luigi was arriving home after a brief and emotional trip to Italy. What better to come home to than a bowl of minestrone and some warm homemade bread. It doesn't matter that its 100• outside, no there are moments in life when something warm and familier is what makes everything seem a little brighter.
So this was a staple in Delinda's. Kitchen. Simply take your selection of FRESH veggies and chop them up into bite size pieces, then in a big soup pan heat some olive oil and add all your veggies, keep stirring until the greens are wilted and everything appears a little softer, add chicken broth until the veggies are completely covered and the hidden secret is dropping an old piece of parmasen cheese crust into the soup, you know that piece you usually throw away!! Cover with a lid and let simmer slowly for a few hrs, part of the experience is letting your entire house slowly fill up with the comforting aroma of minestrone soup
To serve you can just ladel into bowls and cover with a generous serving of fresh parmasen cheese or about 20 minutes before you are ready to eat add some short cut pasta to the soup, bring to a boil and stir it frequently until pasta is tender. Either way I know after making this once it will become one of your staples too
